Day 2258 - Festive Dips

Dip into the Festive Season with these two crowd pleasers.


Cathy and I have been hanging out in the kitchen this morning preparing these quick easy dips for an afternoon gathering.

If you're looking for something to contribute to your next Christmas party then try this Cold Crab Dip and a Hot Spinach and Artichoke Dip.



Cold Crab Dip

Ingredients

400 grams of imitation crab
1/2 cup of mayonnaise
3 stalks of celery
1/2 teaspoon of Cajun seasoning
Salt to taste

Chop crab and celery into tiny pieces and place into bowl. Add all other ingredients and stir until well combined.  Serve immediately or refrigerate to store.  Serve with crackers to dip.





Hot Spinach and Artichoke Dip

Ingredients

1 cup of artichoke hearts

1 cup of chopped spinach

2 cloves of garlic minced

1 chopped onion

1/2 cup sour cream

1 cup of Italian cheeses (4 cheeses)

1/2 cup grated Parmesan cheese

1/4 cup Italian herbs

1/2 cup of grated tasty or cheddar cheese.

In a mixing bowl combine all ingredients in the order listed above (except for the tasty/cheddar cheese) and spoon into a small greased lasagne baking dish.  Sprinkle the tasty or cheddar cheese across the top.  Bake in a 200 degree Celsius oven for about 20 minutes to half an hour.  Serve with tortilla chips or crackers or chopped bread stick.

Note:  If you are taking this to a party it is best to bake it on arrival so that it is warm and so you get the full effect of the melted cheese.
