Day 2328 - The quick easy dinner

Are you a chef cheat like me?



If I can find a short cut to cooking, I will.

I am definitely not one that takes great pride in being Betty Crocker (using Betty Crocker, yes, being Betty Crocker, no).



Take this meal for example.

Chicken schnitzel with salsa and cheese (or Thai chilli and lime cakes for the vegetarian teen), with a side of sesame greens and herb bread.



I have absolutely no desire to make my schnitzels from scratch if the deli already has them done fresh for me.

I also have no desire to make my daughter's vegetarian patties from scratch if I can find them with limited additives and zero flavour enhancers at the supermarket.

Of course the herb bread is also store bought - all herbed up and ready to go.

I'm a chef cheat.

I am very big on fresh vegetables and fruit. I try not to include too many packets or jars in our meals, nor frozen or canned veges, although the occasional satay sauce, pasta sauce or salsa does get used. Oh, and when it comes to baking, I'm a big fan of the Betty Crocker cake mix.

Zucchini, broccolini, asparagus, green beans stir-fried in sesame oil, sesame seeds with a splash of soy to finish.

There is never any deep frying (these schnitty's are oven baked).

I try to be as clean and green as a chef cheat can be, while using deli shortcuts in the process. Is that possible? (Speaking of shortcuts, I even buy the cheese already shredded.)

I really really REALLY admire people who enjoy cooking and can do fancy things. I'm just not one of them. I ain't got no time for dat!

I'm a chef cheat.

  1. Yes, I'm a chef cheat too. I do try to make things from scratch sometimes, but nine times out of 10 things just don't turn out how I like them. Those thai chilli and lime burgers are the bomb. I eat them most nights :)

    1. They are the bomb aren't they! I had a couple of her left over ones cut up in salad for lunch the next day. DIVINE!

  3. Don't you love modern life? I often cheat, especially on weekdays. Weekends, if I can be bothered, I might make more effort. Those meals look good!

    1. My Hubs cooks on weekends. He's a chef cheat too ... I call him our "bistro chef" ... but he loves it. Me, not so much.

  5. I'm a thermomix owner, so I cook a lot from scratch but with a thermie, it's way easier to do so! I do love frozen veg though- peas and corn mainly. Because frozen veg is picked, cleaned and snap frozen all at the same place, it's actually fresher than most of what we buy "fresh"!

    1. Oh yes, I do frozen peas. It's good to know the frozen option is good quality for the times we haven't been fresh food shopping.

  6. I'm a cook from scratch mostly person. But I don't use recipes, I just throw stuff in the pan and go with it!

  7. I try to balance things (ha, ha) - but actually half the time I can't be bothered/too busy and the other half I make a real gourmet effort. I love cooking when I have time and get real sick of it when I don't.

  8. I cook from scratch most of the time but find the easiest/cheats way to do it (and use a Thermomix).

  9. I'm a bit of both. I love making things from scratch with lots of fresh ingredients and I usually bake cakes etc from scratch. But there's nothing wrong with cheating at all. Especially when I'm tired or just couldn't be bothered!

    1. I used to bake cakes from scratch. But Betty just makes it so damn easy ...
      There is a banana/sour cream cake I'll still do from scratch once in a blue moon (with cream cheese icing). Betty hasn't nailed that one yet.

  11. I'm a chef cheat too. The way I look at it is, if getting pre-chopped veggies means that I am actually going to eat them then it's all good. Plus my kitchen is in an alcove with no airflow so the less time I spend in there the better!
