I actually don't own a lemon tree, but I know somebody who does and when they handed me a bag full of lemons I did the only think I could. (No, it doesn't include vodka.)
When life hands you lemons, make lemon slice.
Given I'm not a cook (nor a baker) it feels weird for me to be sharing recipes this week, but you can trust me on this one. I am getting them from reliable sources. This one was from Taste.Com.au

150g unsalted butter, chopped
1/2 teaspoon vanilla extract
1/3 cup caster sugar
1 tablespoon cornflour
1 1/3 cups plain flour
Icing sugar mixture, to serve
1 teaspoon finely grated lemon rind
1/3 cup plain flour
1 1/3 cups caster sugar
2/3 cup lemon juice
1. Preheat oven to 180 degrees (or 160 if fan forced). Grease a 3cm deep 16 x 26cm slice pan. Line with baking paper.
2. Place butter in a large microwave safe bowl. Microwave on medium for 1 minute or until melted. Set aside to cool. Stir in vanilla and sugar. Sift flours over butter mixture. Using a wooden spoon, stir until a soft dough forms. Transfer to prepared pan press into pan. Bake for 15-20 minutes or until golden. Remove from oven. Set aside to cool.
3. Topping: Whisk eggs, lemon rind, four and sugar together until smooth. Add lemon juice. Whisk to combine. Pour over base. Bake for 15 minutes or until just set. Cool completely in pan. Dust with icing sugar. Cut into slices.

Now because cooking doesn't come naturally to me I did stuff a few things up. Firstly I didn't measure out how much lemon rind I used and as a result my slice got VERY lemony.
I also decided to double the recipe because I didn't have the right sized slice pan which worked out OK but it meant that double was too much for my slice pan (due to the height) so I ended up transferring my base to two smaller lasagne style pans. It all got a bit messy and it was touch and go for a while, but it all worked out in the end.
Oh, and I didn't whisk, I used my mixer instead and that seemed to work OK.
So if life hands you lemons, make lemon slice!
