I have been looking for alternative snack options for my kids. You know, the healthier kind. Something that doesn't come in a packet and isn't full of preservatives, flavour enhancers and colours. When I saw these breakfast muffins I thought "bingo". Replace "breakfast" with "all day" and we've got a winner.

You place your chopped ingredients in first, then just pour your egg mixture. |

The Recipe
Ingredients:
8 large eggs
1/4 cup milk
1/2 tbsp vegetable oil
1/2 tsp baking powder
Salt and pepper to taste
Vareity of your family' favourite chopped vegges, breakfast meats and shredded cheese
Direction:
Preheat oven to 170
Whisk eggs, milk, oil, baking powder and salt/pepper
Spray a 12 muffin tin with cooking spray
Fill the muffin cups with favourite family chopped toppings
Pour egg mixture over filled muffin cups
Bake 15-20 minutes.
Cool and enjoy!
NB: Can be served warm, or put tray in fridge to set before removing from muffin tray if you would prefer to keep these treats cooled for later. Great to eat hot or cold.
* They're called breakfast muffins but probably more resemble a mini quiche.
