Day 2295 - A Quick Dinner Idea

Need to create a tasty meal quickly?

Warning: This is a recipe from a non-foodie, non-cook. I am someone looking for healthy meals without too much fuss and bother. A quick meal's a good meal! 

All you'll need is some sliced red and green capsicum, baby spinach leaves, chopped zucchini, black olives, diced red onion, sesame oil, sesame seeds and a roast chook (that's chicken for all you non-Aussies).  Plus either some pasta, brown rice or "cauliflower rice" to serve. Oh, and some garlic or herb bread.

Chop up all the veges and saute them in sesame oil until they're cooked through. Sprinkle on some sesame seeds during the cooking process.  Right near the end add some chopped up roast chicken.

While all that's going on, you can either cook some spiral pasta, some brown rice, or cook up some cauliflower and whiz is up in a blender to make "cauliflower rice".

Whack some ready-to-heat garlic bread into the oven.

Pour your vege chicken concoction over your pasta/rice/cauli and serve!

(For the vegetarian option just leave out the chicken).

For those who like a more tomatoey flavour, throw in a spoon full of basic pasta sauce and mix.
